Reduced Sugar Cranberry Cookies

1/2 cup butter, softened

4 tablespoons Splenda brown sugar blend

4 tablespoons Splenda sugar blend

1 egg

1 1/2 cups all purpose flour

1/2 teaspoon baking soda

2 teaspoons orange extract

1/3 cup white chocolate chips

1/3 cup sweetened dried cranberries

 

Preheat oven to 375 degrees F.

In a mixing bowl, cream together the butter, Splenda brown sugar blend and Splenda sugar blend; beating on medium speed about 1 minute. Beat in the egg and orange extract until well blended. In a medium size bowl, combine the flour and baking soda; add to the creamed mixture. Mix on medium speed until well combined. Stir in the white chocolate chips and sweetened dried cranberries.

Take enough of the batter to roll into a 1-inch ball. Place on a lightly greased cookie sheet, about 2 inches apart. Bake for 12-14 minutes or just until lightly browned; do not over bake. Remove cookies to wire rack to cool.

Makes about 36 cookies
